The Vegan Sweet Potato Pie

Heat the oven to 350F

Bake potatoes for 45 minutes

Break apart the sweet potato in a bowl. Add vegan butter, and mix well with the mixer.

Stir in the Monk fruit sugar, almond milk, yogurt or applesauce, nutmeg, ginger, cinnamon and vanilla extract. Beat on medium speed until mixture is smooth.

Pour filling into an unbaked pie crust. I use a graham cracker crust

Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until a knife inserted in the center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
